Instructions:
1. Preheat the Oven: Place a small rimmed baking sheet in the oven and preheat to 425°F (220°C).
2. Prepare the Beets: In a medium bowl, stir together the oil, salt, and pepper. Add the beets and toss well to coat them evenly.
3. Roast the Beets: Transfer the coated beets to the hot baking sheet, spreading them out in a single layer. Roast in the oven until they are almost tender, about 20-25 minutes.
4. Add the Glaze: Remove the baking sheet from the oven. Drizzle the beets with honey and lemon juice, then toss to coat. Spread the beets out again and return to the oven.
5. Finish Roasting: Continue roasting for another 5 minutes, until the beets are tender and caramelized.
