If you picked up a CSA box this week, chances are you’re staring at a beautiful pile of fresh onions, zucchini, yellow squash, potatoes, and peppers — and maybe wondering how to turn that summer bounty into something simple, satisfying, and full of flavor.
We’ve got just the thing: Zucchini, Squash & Pepper Skillet Hash — a one-pan wonder that’s as flexible as it is delicious.
Why We Love This Dish 🌱
This recipe checks all the boxes:
- Seasonal and fresh – Straight from the fields at Harvick Farms.
- One skillet – Less mess, less stress.
- Totally customizable – Add eggs, cheese, herbs, or even meat if you’d like.
- Perfect anytime – Breakfast, lunch, or dinner — this hash doesn’t judge.
It’s the kind of meal that feels fancy without the fuss. And the best part? You can make it with 100% local produce from this week’s CSA box.

🧄 Ingredients
- 2 tbsp olive oil or butter
- 1 onion, diced
- 2–3 new potatoes, diced
- 1 zucchini, diced
- 1 yellow squash, diced
- 1–2 sweet peppers (any color), chopped
- Salt & pepper to taste
- Optional: garlic, smoked paprika, fresh herbs (thyme, parsley)
- Optional: eggs to crack on top 🍳
🔥 Directions
-
Cook the potatoes
Heat a large skillet over medium heat with 1 tbsp of oil. Add the diced potatoes and cook for about 10 minutes, stirring occasionally until they start to brown and soften. (Add a splash of water and cover if they’re sticking or drying out.) -
Add the onions and peppers
Toss in the diced onions and chopped peppers. Cook for 5–7 minutes until the onions are translucent and peppers are tender. -
Stir in the squash and zucchini
Add the diced zucchini and yellow squash. Season with salt, pepper, and any herbs or spices you like. Cook for another 5–7 minutes, stirring occasionally, until everything is golden and cooked through. -
Optional: Top with eggs
Make a few small wells in the skillet and crack in eggs. Cover the pan and let cook until the whites are set and yolks are soft. -
Serve & enjoy
Spoon into bowls and top with chopped herbs, hot sauce, or a sprinkle of cheese if you’d like.
🥕 Make It Your Own
This dish is flexible — that’s what we love about it! Try:
- Adding sausage or bacon for a meatier version.
- Swapping in sweet potatoes or turnips.
- Topping with shredded cheddar, feta, or goat cheese.
- Folding in spinach, kale, or other leafy greens at the end.
