🧄 Ingredients

  • 2 tbsp olive oil or butter
  • 1 onion, diced
  • 2–3 new potatoes, diced
  • 1 zucchini, diced
  • 1 yellow squash, diced
  • 1–2 sweet peppers (any color), chopped
  • Salt & pepper to taste
  • Optional: garlic, smoked paprika, fresh herbs (thyme, parsley)
  • Optional: eggs to crack on top 🍳

 

🔥 Directions

  1. Cook the potatoes
    Heat a large skillet over medium heat with 1 tbsp of oil. Add the diced potatoes and cook for about 10 minutes, stirring occasionally until they start to brown and soften. (Add a splash of water and cover if they’re sticking or drying out.)
  2. Add the onions and peppers
    Toss in the diced onions and chopped peppers. Cook for 5–7 minutes until the onions are translucent and peppers are tender.
  3. Stir in the squash and zucchini
    Add the diced zucchini and yellow squash. Season with salt, pepper, and any herbs or spices you like. Cook for another 5–7 minutes, stirring occasionally, until everything is golden and cooked through.
  4. Optional: Top with eggs
    Make a few small wells in the skillet and crack in eggs. Cover the pan and let cook until the whites are set and yolks are soft.
  5. Serve & enjoy
    Spoon into bowls and top with chopped herbs, hot sauce, or a sprinkle of cheese if you’d like.
