Green beans and peppers recipe | Harvick Farms

Ingredients

For 1X

  • 1 lb fresh or frozen green beans
  • 1 Tbsp olive oil
  • 1 large red bell pepper, sliced thin
  • 1 onion, sliced

For the Sauce:

  • 1/4 cup reduced-sodium soy sauce
  • 2 Tbsp sweet chili sauce
  • 1 Tbsp honey
  • 1 Tbsp grated ginger
  • 2 cloves garlic, minced

Instructions

  1. Blanch the Green Beans:
Bring a large pot of salted water to a boil. Blanch the green beans in the boiling water until bright green and tender, about 2 to 3 minutes. Drain and immediately put the green beans in a bowl of ice water to stop the cooking process.

  2. Sauté the Vegetables:
Meanwhile, heat a large skillet over medium heat and drizzle olive oil. Sauté the red bell pepper and onion for about 2 minutes, then add in the green beans. Sauté the green beans with the peppers and onions for about 5 more minutes or until the green beans start to soften and blister.

  3. Prepare the Sauce:
In a small bowl, whisk together soy sauce, sweet chili sauce, honey, ginger, and garlic. Pour the sauce over the veggies in the skillet. Cook for an additional 2 minutes, making sure everything is coated.

  4. Serve:
Remove from heat and sprinkle with sesame seeds if desired. Serve and enjoy!
