Caramel Apple Turnovers: A Delightful Harvest Treat from Harvick Farms

These irresistible Caramel Apple Turnovers. With flaky, buttery puff pastry filled with spiced apples and drizzled with homemade caramel sauce, they're a delicious way to savor the tastes of autumn.

Caramel Apple Turnovers Recipe

Ingredients:

For the Apple Filling:

  • 2 cups diced apples
  • 1 tablespoon brown sugar
  • 1/2 teaspoon ground cinnamon

For the Egg Wash:

  • 1 large egg
  • 1 tablespoon water

For the Pastry:

  • All-purpose flour, for dusting
  • 1 (14-ounce) package all-butter puff pastry (such as Dufour Classic), defrosted
  • Turbinado sugar, for sprinkling

For the Caramel Sauce:

  • 1 cup granulated sugar
  • 1/2 teaspoon kosher salt
  • 4 tablespoons (1/2 stick) unsalted butter, cut into pieces
  • 1/3 cup heavy cream, at room temperature

Instructions:

  1. Prepare the Apple Filling:
    In a medium saucepan, combine the diced apples, brown sugar, and ground cinnamon. Cook over medium-low heat, stirring occasionally, until the apples are softened, about 5 to 7 minutes. Set aside to cool slightly.

  2. Make the Egg Wash:
    In a small bowl, beat the egg with 1 tablespoon of water. Set aside.

  3. Preheat and Prepare Pastry:
    Preheat your oven to 400°F. Line a rimmed baking sheet with parchment paper. Lightly flour a work surface and roll out the puff pastry into a 14-by-14-inch square. Cut the pastry into 9 equal squares.

  4. Fill and Fold Turnovers:
    Place a heaping tablespoon of the apple filling in the center of each pastry square. Brush the edges with the egg wash. Fold each square diagonally to form a triangle, pressing the edges together with the tines of a fork to seal. Use a sharp knife to make small slits on top of each turnover for steam to escape.

  5. Chill and Bake:
    Arrange the turnovers on the prepared baking sheet, brush the tops with the remaining egg wash, and sprinkle with turbinado sugar. Chill in the refrigerator for 15 minutes. Bake in the preheated oven for 15 minutes, then reduce the temperature to 350°F and continue baking until the turnovers are puffed and golden brown, about 12 to 15 minutes. Transfer to a wire rack to cool.

  6. Prepare the Caramel Sauce:
    In a small saucepan, combine the granulated sugar, kosher salt, and 1/4 cup water. Cook over medium-high heat, without stirring, until the mixture reaches 350°F on an instant-read or candy thermometer and turns a golden brown, about 7 to 10 minutes. (You can gently swirl the pan if the edges darken too quickly.) Remove from heat and carefully stir in the butter and heavy cream. The mixture will bubble up, so take care to avoid splashes.

  7. Finish and Serve:
    Drizzle the warm caramel sauce over the turnovers and serve. Enjoy these delicious Caramel Apple Turnovers as a sweet breakfast treat or a comforting dessert!
